Award-winning chef/owner Vitaly Paley will open Headwaters, in the reimagined dining room at the historic Heathman Hotel in fall of 2016. Celebrating Oregon’s diverse bounty, from farm to sea, Headwaters will showcase Paley’s renowned cooking, which helped him earn a 2005 James Beard Foundation Best Chef Pacific Northwest Award, Portland Monthly’s 2012 Chef of the Year, and the 2012 Empire Builder Award by Food & Wine.
